Valentine’s Day Cherry Pie

The other day, Roberto said to me, “so what are we doing for Valentine’s Day”… ladies, I have trained him WELL. It also made me realize that V-day is super super close!I just love Valentine’s Day because it’s an excuse to have a little creative fun with your food or other little projects, and ok, any day to get a little lovey dovey is alright by me. SO, back to this yummy Valentine’s Day Cherry Pie – isn’t it so sweet? It’s also beyond easy to make, and I whipped it up the other day for our Sunday family dinner. A little dollop of whip cream on top, and voila, you actually look like you know what you’re doing. Here’s how I made it…

VALENTINE’S DAY CHERRY PIE

Two pie crusts (I called my local pie shop/bakery and they made me a few balls of dough!)
Two cans high quality cherry pie filling

Pre-heat oven to 350 degrees.

  • If your pie dough is frozen, let it thaw in the fridge, and then prep your counters for rolling by sanitizing well. Sprinkle flour on your surface, and roll our your cold dough to desired thickness.
  • Allow the dough to rest for 5 minutes – this helps the gluten relax and it will help to avoid it from shrinking in the oven.
  • Place the dough in your 10″ pie plate, giving a little slack – do not pull tight. Cut around the pie plate so the excess dough is released, and then press the edges into your pie plate (this is called fluting the edges if you’re fancy).
  • Roll out the other ball of dough, and then use your cookie cutter to create shapes. Place shapes in your desired pattern, and then put your pie in the oven.
  • Keep an eye on how it bakes – sometimes your edges will brown faster than the top, so if this happens, take out the pie, and wrap the edge in tin foil.
  • The pie is done when the top is golden brown!
