A few weeks ago, we celebrated my mom-in-law’s birthday, and I had NO time to focus on menu planning. Thank gosh for my hubs who came up with the most brilliant idea: Greek barbecue! Ok, so not sure that’s actually a ‘thing’ or that this meal is really all that Greek, but we had pita and tzatziki, so it kind of was, yes?
This is seriously one of the most tasty and easy meals to make and we officially decided it would be our go-to for entertaining. It’s as simple as getting some veggies (peppers, zucchini, red onion – toss in olive oil and a generous amount of salt and pepper before you poke ’em), and some meat (we chose chicken thighs because they aren’t only tastier, but more affordable than breasts). We marinated our meat in piri-piri sauce from Nando’s… do they have Nando’s in the US? Such an easy cheat. Pile everything onto your soaked skewers and you are ready to bbq!
Grab your olive oil brushed pita, and warm them on the grill, get your homemade tzatziki ready, and some feta! I would love to nix the meat next time, and add pineapple to these skewers. I like to wrap everything in the pita, but you can eat them separately, too. I see it all as a form of self expression, really.
