Four Ways to Eat Rice Cakes

Rice cakes always remind me of adolescence. They kind of had a moment in the 90’s when you would top them with peanut butter, and call them a snack. Years later, I’m remixing them into something that’s a tad more exciting.

Snacking is definitely a way of life. Whether you need something mid-morning, mid-afternoon or even before bed, our four rice cake topping ideas are healthy and fast! When you’re craving something creamy, crunchy, fresh or sweet, these recipes are sure to satisfy. What’s more, they are all gluten-free and vegan. The options are endless, so open your fridge and make a meal out of almost anything—just put it on a rice cake!

  1. Mashed avocado and sliced radish, with a sprinkle of sea salt and red chili flakes equals a delicious (and easy to make!) breakfast or lunch option!
  2. Hummus (don’t be afraid of the good-quality store-bought stuff) topped with peppery arugula and a drizzle of olive oil makes for a quick and light lunch!
  3. Vegan cream cheese topped with cherry tomatoes and a little balsamic crema (a syrupy balsamic vinegar) is a yummy option for breakfast—or any time of day, really.
  4. For the ideal dessert, apply creamy almond butter on a rice cake and top it with slices of banana, a drizzle of honey and a crumble of cashews.
