quick and easy tzatziki

We recently celebrated my mom-in-law’s birthday, and we were hosting. I’ve been busier than ever (you’re like, “I know, you hardly even blog anymore”… I’m sorry!), so fitting in the time to meal plan, shop, prepare and cook was an overwhelming thought. Husband to the rescue! he came up with the most amazing greek menu that was super easy to execute.

He made this ultimate easy tzatziki for our Greek feast that I just had to share with you – it was tasty, cooling and just perfection! I’ll share the rest of the meal with you next week!

GREEK TZATZIKI (serves 6)

  • ½ a large cucumber, unpeeled
  • 1½ cups plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • 1 tablespoon minced fresh dill
  • juice of one lemon
  1. Grate the cucumber and drain with a papertowl (squeeze the cucumber with a paper towel until all the water is removed – hey, keep that cucumber juice and add it to your water later…. his reco!)
  2. Combine the yogurt, garlic, oil, lemon, and salt in a large bowl. Leaving it in the fridge overnight helps the flavours combine, but it’s fine if you don’t have time.IMG_0635
  3. Transfer the grated cucumber and fresh dill to the yogurt mixture and stir to combine. Garnish with paprika and a few olives if you’re fancy like us.   Serve chilled with warm pita bread for dipping.
