Easy Weeknight Meal

If you follow me on Snapchat, sometimes I’ll feel industrious and domestic and snap my evening meal processes… that involves me narrating my step-by-step prep! I love sharing with you guys there (I’m erinscousa if you want to follow along!), and the other evening, I shared this suuuuper easy Chicken Souvlaki. It’s such an easy weeknight meal that you can really make with so many things you most likely already have on hand. It also happens to be healthy and delish. Here’s how I whipped it up! Just a heads up, for these meals, I really don’t bother with quantities, and tinker around, doing everything to taste. I’m only feeding two of us, here, so I keep it easy breezy. Trust your instincts and seriously just have fun with it!

weeknight dinner

Chicken Souvlaki

Naan (store-bought)
Chicken thighs (organic if you can)
Kalamata olives (pitted, cut in half)
Feta cheese (cubed)
Cilantro (chopped)
Tzatziki (store-bought)
Hot sauce

Chicken Marinade

Lemon juice
Garlic, minced
Olive oil
Salt/pepper

Prepare chicken, and marinade it either overnight, or for as little as an hour in the fridge. Halve peppers and cut onions into rings. Grill chicken until cooked, adding peppers and onions to the grill once chicken is half cooked. Remove chicken and veggies, and cut each into bite sized pieces. Add the naan to the grill to warm. Once warm, top with your toppings, and enjoy! If you don’t have a BBQ, everything can easily be done on your stove top, in a frying pan.
